CREAM OF LEEK AND APPLE

Today we have an easy recipe, fast, economic ... and best of all, healthy and delicious. The cream of leeks and apple is one of those dishes that can solve a light dinner or be the entree of a more forceful dish, both for summer and winter.

Leeks are a food rich in vitamin K. Among its nutritional properties highlights the presence of calcium, protein, fiber, zinc, potassium, sodium and vitamins A, B7, B9, C, D and K. Onion sum of calcium, fiber , iodine, magnesium, potassium, sodium, phosphorus and vitamins A, B7, B9, C and E. The presence of potato adds significant amounts of carbohydrates, proteins, calcium, zinc, sodium, iodine, fiber, phosphorus and vitamins B3, B9 , C and K. And the apple provides flavonoids, polyphenols, antioxidants, vitamins of group B (B1, B2 and B6), vitamin C, phosphorus, potassium and calcium. In addition, thanks to the presence of malic and tartaric acid facilitates the digestion of those foods that have a high fat content. It is a somewhat caloric recipe but with great nutrients for the body.

Elaboration:

We start by washing and cleaning the leeks, cut the white part into pieces. Peel the potatoes and cut them into pieces and do the same with the apples, peel them, remove the center and cut them into pieces.

We put a casserole over medium heat with a stream of Betis oil, add the leeks, sauté them for a few minutes until they are transparent and add the cut apples, season and sauté next to the leek for a few minutes.

Then add the potato and the broth, let it cook for about 20 minutes until everything is smooth.

When we have it ready, we remove a little broth and crush it, and depending on whether we like it thicker or more liquid we add it.

We return the cream to the fire, rectify salt and pepper, stir well and turn off.

We serve it in bowls and sprinkle with parsley or chives to decorate.

It can also be taken cold, so if you like cold you just have to put it in the fridge until serving time.
