Is there any other dish that we like as much as croquettes? They can be made in the shape of balls or sticks, with different batters, fried, baked, and even vegan, gluten-free or lactose-free, with a thousand and one ingredients, making each house to be made in a special way that distinguishes them from the others. Our proposal today is simply delicious apple and cheese croquettes.
The croquettes are very appreciated appetizers, tasty and easy to eat. Due to the type of ingredients used for their elaboration (milk, flour, egg …, besides the filling), they are a nutritious and very energetic dish, since they have to be fried. It is a very caloric dish so it should be consumed sporadically, even more if you have a problem of excess weight or have high levels of cholesterol or triglycerides in the blood.
We start by peeling the apple and cutting it into small cubes. We put a pan to the fire with 100 gr of butter and sugar. Cook until the apple cubes are well browned and set aside.
We put the milk to heat.
Peel the onion and cut it into small cubes. Put a pan on the fire with 100 g of butter and sauté it, until it is translucent, add the flour and stir well. Cook the mixture for about 5 minutes and add the hot milk little by little, stirring until the dough begins to peel off the walls of the pan.
Remove the mixture from the heat and add the shredded cheese, the apple and salt and pepper to taste.
We pour the mass of the croquettes in a source and cover it with perforated film so that the surface does not harden. Let cool for 2 hours in the refrigerator.
Once the dough is cooled, we take portions with a spoon and form balls. We pass these balls for beaten egg and finally for the bread crumbs.
In a pan with plenty of hot Betis oil, we fry them in batches so that the Betis oil does not cool, when they are golden brown, we take them out and put them on the absorbent paper.
We can serve them in a warm basket or tray although we can also take it cold. They are delicious anyway. To enjoy!
