In oriental cuisine we can find exotic and easy to prepare dishes, perfect to surprise our family or delight our guests. It is a very healthy and balanced food in which vegetables and pasta are widely used. When cooking, rather than frying, steaming, stewing and sautéing are preferred. For you to try a dish of these characteristics we propose this recipe for chicken with vegetables.

 Chicken, the main ingredient in this recipe, has one of the healthiest meats, as long as we consume it without skin. In addition, it contains very little fat and its proteins are very easy to assimilate, so it is a food that is especially suitable for children, the elderly and all those people who have a delicate stomach. Vegetables are rich in vitamins, fiber, minerals and proteins, so they will help us maintain cardiovascular health.


 We start by preparing the chicken, cut it into cubes of approximately 2 cm and season it with salt. Sauté in the pan with Betis olive oil until golden brown and reserve.

 We wash the vegetables, and cut the leeks in julienne, only the white part, the carrots and the garlic. In the same pan, add a little more Betis olive oil and sauté the vegetables with a little ground ginger.

 When the vegetables are a little tender, in about 5 minutes, add to the water, like a glass and a half, and the sherry wine (half a glass). We also add the soy sauce and the sugar. With a wooden spoon stir well making sure that all the sugars in the bottom of the pot detach and join the sauce.

 We raise the heat and let reduce the mixture for about 20 minutes. After this time we incorporate the chicken and let it cook for 5 more minutes so that the chicken takes all the flavor of the vegetables.

 We can serve the chicken alone or with boiled rice, however you like it.
