Do you want to eat omelette? Today we have this fabulous recipe for rolls of omelette with spinach, scallions and cheese. It is a very easy and complete, perfect recipe for a light dinner or as a starter since it can be eaten both cold as hot.
The egg-based preparations give a lot of play in the kitchen, as it combines well with all kinds of foods. Its nutritional value is unmatched, and stands out mainly for its contribution of very good quality proteins. In fact, egg proteins are considered the most complete, since they contain all the essential amino acids for man. In addition, it is a source of vitamins A and D, and minerals such as iron, phosphorus, zinc and selenium. The combination with other ingredients as healthy as vegetables and olive oil, make this recipe a luxury dish, both for health and for the palate.
We started by chopping the spring onions and julienne spinach. Once we have them ready we put over medium heat a frying pan with a splash of Betis oil. First cook the onion until it is lightly poached at that time add the spinach to the pan and cook until both are pochen. Once ready, we drain and reserve.
We cut the cheese into 8 sticks and reserve.
We beat the eggs, add a pinch of salt to taste and make 4 omelettes of 2 crepe eggs. Once we have them ready, spread the spinach over the omelette and place a cheese stick in the center of each omelette and roll them up.
We put 4 rolls on a plate suitable for the oven. We put a stick of cheese over each omelette and bake at 220 °C for 4-5 minutes.
We will serve the rolls on a platter, slice in half and garnish with a sprig of parsley.
