Dinners are very present in Christmas because there are so many big days where the lunch or dinner is the most important thing, Christmas Eve, Christmas Day, New Year’s Eve, New Year, Three Kings Day… For that reason, today we bring you a fruit salad that is very light and original and you will surprise everybody. It is a nutritive dessert, with vitamin C, of easy digestion and low-calorie. Can you ask for more?

Elaboration:

The first step is to peel 4 oranges removing the shell and also the membranes that cover each segment. Once they are ready, place the segment distributed in 4 dishes. This is way to peel the oranges is more difficult, but they will be more elegant, juicy and gorgeous, ultimately, the plate will be more palatable.

Remove the seeds from the dates and shred them very finely. Place distributed over the orange segments.

Peel the pistachios and place them in a mortar crushing them until they result into irregular pieces. Distribute them over the oranges and dates.

Squeeze the other orange until you obtain 25 ml of juice. Put a pot with a little saucepan and heat lightly the juice with the orange blossom honey, the drops of orange blossom water and the Betis oil. Emulsify in dribs and drabs and add this warm sauce over the ingredients when a homogeneous mixture. Then add a pinch of cinnamon to your taste.

This delicious fruit salad should be served immediately in order to maintain crunchy the nuts. If you serve the fruit salad with little quenelles of ricotta cheese or fresh goat cheese, it will be amazing.
