Why should we buy muffins when they are so easy to prepare? You are going to love this muffin’s recipe we propose you. These muffins have a delicious orange taste and they are so spongy. They are perfect for breakfast or afternoon with a coffee.

Oil muffins are a real Spanish confectionery classic, they derive from the French madeleine shaped like a shell (from the region of Lorena). It is already naturalized in Spain, to the point that muffins not shaped like a shell are known as “Spanish madeleines”.

Muffins are one of the most popular desserts of the Spanish gastronomy, although the needed ingredients make its caloric value higher, so it is not advisable to abuse, especially for those people who are overweight or have high levels of cholesterol or triglycerides in blood.

Preparation:  

Beat the oil, sugar and eggs in a bowl. Add the orange zest, the whipped cream and set aside.

Sieve the flour, the salt and the raising agent in a bowl with the help of a strainer. Mix well and set aside.

Incorporate the liquid ingredients to the dry ones while mixing until a homogeneous mass.

Cover the mass with a film and leave in the refrigerator for 24 hours.

After these 24 hours, preheat the oven at 210ºC approximately. When it has reached the proper temperature, reduce to 200ºC.

Beat the mass again and distribute in the molds, until ¾ of its capacity and cover each muffin with a film of sugar.

Bake for 15 or 18 minutes depending on the oven, until golden.

Once they are ready, remove from the oven, let them cool over a grid before eating. If you conserve in a hermetic recipient, they stay juicy for various days.

Note: quantities for 12 muffins. Preparation in 40 minutes. Cooking in 20 minutes.

    • 1 sachet of 5 g of raising agent
    • Orange zest
    • Pinch of salt
