PRAWN BROCHETTES

Preparation

Brochettes are a perfect appetiser for any occasion, they are easy to make and are certainly pleasing to the eye. The secret to making them is in finding harmony between their flavours and colours. Today's recipe is a demonstration of just that – the slices of pineapple, courgette and pepper provide a delicious sweet and sour taste, a counterpoint to the flavour of the seafood. What's more, this dish can be cooked either on a barbecue, on a grill or in the oven.

Prawns (or shrimps) are rich in protein and contain very little fat. In addition, they are a good source of minerals such as phosphorus, iron and iodine. They are suitable for a calorie-controlled diet, except perhaps for those who have very high levels of cholesterol or uric acid. However, the cholesterol in prawns is mostly found in the head. For this reason, removing the head is recommended, particularly if you have high cholesterol.

Finally, the vegetables and fruit included in this recipe add plenty of vitamins, minerals, fibre and antioxidant compounds.

Preparation:

First of all, if you are using wooden skewers, soak them in water for about 10 minutes. This is so that they do not burn and so that the ingredients come off easily when they are served.

Next, peel and wash the prawns and add a little salt.

Wash and then chop the courgette, pepper and pineapple into slices of about the same thickness as the prawns.

Start adding the ingredients to the skewers in the following order: prawn, courgette, pepper, pineapple.

Prepare the dressing in a bowl with the juice of the lime, 4 tablespoonfuls of Betis olive oil and black pepper and stir well.

Place the brochettes on the grill, or wherever you are going to cook them, coating them well with the dressing on the side being cooked first. Leave them to cook for a couple of minutes. Then turn the brochettes and brush the other side with dressing. Leave them to cook for another couple of minutes.

Serve the brochettes straight away to enjoy this dish at its best. Ideal accompaniments include salads and white rice.
