tartar

Today we propose a recipe dedicated to fish lovers. With this recipe you can appreciate the real taste of tuna.

Tartar is a dish based on raw meat or fish, finely chopped, with a citrus (lime or lemon) and seasoned or flavored with spices and sauces. The truth is that it meets all the requirements to be considered an appropriate dish for a special occasion because it is very colorful and its taste very powerful. However, far from being something complex, it turns out to be a very simple recipe.

Tuna is one of the blue fish richest in omega 3 fatty acid (it has about 12% fat) and it has multiple benefits. Consuming it contributes to lower levels of triglycerides and blood cholesterol, as well as the risk of cardiovascular accidents, atherosclerosis and thrombosis and increased blood pressure. It contains high levels of vitamins B2, B3, B6, B9 and B12. It also contains vitamin A that favors the resistance against infections and D, important for the absorption of calcium. On the other hand, the avocado, has a high content of vegetable oils, so it is considered an excellent food in terms of nutrition. However, due to its high caloric and fat content, it must be consumed in moderate proportions. It has antioxidant properties and provides the body with vitamins E, A, B1, B3, fatty acids, proteins and minerals.

Preparation:

When you marinate a piece of fish, you should consider two important things. The major one is that the fish should be very fresh. The second one is that you should freeze the piece before its preparation and intake, at least for 3 or 4 hours (depending on the width of the piece) and when it is hard, you can cut or dice because the frozen piece is easier to manipulate. This is important in order to avoid the infection by anisakis (parasite whose life cycle affects fish or shellfish, which can cause severe lesions in the digestive tract).

Dice the tuna in 1 cm dices approximately (piece previously frozen).

Place the tuna, the grated lime peel, a pinch of salt and ground black pepper in a bowl and save in the fridge.

In order to prepare the vinaigrette, mix in a bowl, 4 tablespoons of Betis olive oil, 1 tablespoon of soy sauce and 1 teaspoon of Dijon mustard. Stir with the help of a rod or a fork.

Dice the tomato, the spring onion and the avocado just like the tuna.

Chop the chive very thin.

Mix the vinaigrette with the tuna, you should not let it marinate in excess, never more than 30 minutes.

To serve, place a base of tomato, another of avocado on top of the marinated tuna and sprinkle with a little chive.
