The vegetable soup is a very light meal that leaves no feeling of heaviness, which is why it is a good option also for dinners. This makes it a very versatile dish at different times of the year. In summer, we want to enjoy a fresh vegetable soup, and on the contrary, in winter, what we most want is to be hot to counteract the cold.

Soups are very easy to prepare dishes to which you can add a variety of ingredients, and whenever you can, use seasonal vegetables. Vegetables are source of different vitamins, minerals and substances with antioxidant action. This recipe is appropriated to those people who need to lose weight, since they have a high satiety value while their ingredients do not have a high caloric content, nor do they have fat.

Elaboration:

The first step is to clean vegetables. Peel those vegetables that need and cut them all in small pieces that fit in a spoon.

Place a little Betis olive oil in a cooking pot, when it is hot, add the sliced leek and fry. Then, little by little, add the rest of vegetables and sauté for 5 minutes at medium heat in order to get tastier. This is the moment to incorporate the spices you chose (pepper in this case).

After 5 minutes, add 1L water and rectify salt. Cook vegetables at medium heat for 35 minutes approximately until soft.

You can also add some noodles in the las minutes of cooking to add complex carbohydrates.

If you want to give some color, add a little turmeric once it is ready, just serve and enjoy.
