Today we want to show you a simple, healthy pasta salad dish with broccoli, which everyone will love. There are of course all types of salads, including those with meat, fish, fruit and vegetables and other ingredients. We all know that variety is the spice of life, and for this reason, this recipe can be thought of as a base, to which you can add whatever takes your fancy – just use your imagination.

In today's recipe, the vegetables provide plenty of vitamins, while the carbohydrates in the pasta give us plenty of energy. Any type of pasta can be used, but our recommendation is to use spiral shapes, which allow the pasta to lock in the flavour of the dressing.

Preparation:

The first thing to do is to boil the broccoli: cover it in salted water in a saucepan and leave it to simmer until it is just done. Be careful not to overcook it as this will boil away all the nutrients. When it is ready, remove it and use the water to cook the pasta according to the instructions on the packet.

While the pasta is cooking, cut the olives, the broccoli and the cherry tomatoes into small pieces and put them in a bowl. Next, add the Betis olive oil and the cider vinegar, along with a pinch of salt and thyme for seasoning. At this point, you can add any other ingredients you like, for example tuna or anchovies.

When the pasta is ready, drain it and stir it in to the mixture. The salad is now almost ready – all you have to do is keep it in the fridge for a while to let it cool before serving it. As a finishing touch, you could try adding a little grated cheese or Parmesan, and why not add a sprig of parsley for decoration?
