COLD RICE CAKE
As you can imagine, if you already know us, today we propose you a recipe without complications, perfect to leave done from one day to another and that will come to you in luxury for when you arrive from the beach, the swimming pool or from work.
Rice
is one of the basic foods of the Mediterranean diet, it is a food
rich in carbohydrates and has little fat. This rice cake recipe is
very complete, as it is accompanied by different vegetables, a source
of vitamins, fibre and substances with antioxidant action, tuna, a
source of good quality proteins and other protein foods such as peas.
The nutritional characteristics of the ingredients that make up this
rice cake, makes it possible to take if desired as a unique dish.
Elaboration:
In
the first place what we will do will be to put to cook the rice. In a
pot we will put the rice, with the double of the volume of the rice
of water and a pinch of salt. We will put to heat the pot to medium
fire and, when it breaks to boil we will put the rice, we will stir
and we will cover. Let it cook between 15 and 20 minutes until the
rice is cooked to our liking. Once it is ready, strain it and let it
cool down.
While
it cools the rice we will prepare the filling, for it we will chop
the lettuce, the surimi and the olives, we will grate two of the
cooked eggs and the carrot. In a bowl we
will mix all the ingredients
along with tuna, peas and mayonnaise until you get a homogeneous
paste.
Next
we will prepare the base of rice, for it we will use a mold that we
will cover with paper film so that it does not stick and to demold it
with facility. Put half of the rice as a base in the mould, press
with the help of a spoon so that it is pressed. We will add the
filling and we will press again and to finish we will add the rest of
the rice and we will press again.
Once
it is ready, let it rest in the fridge until it is ready to serve.
We can decorate it with a little boiled egg and sliced tomato. To
give it a little more colour, sprinkle with chopped chives.
