This recipe is a success in several ways. The preparation of salmon meatballs is simple and a different way of presenting the fish. In addition, it can be accompanied by various types of sauces and will always be perfect. It has ingredients that combine perfectly, giving the dish a distinguished and yet delicious touch. It is a versatile recipe like all the meatballs, and the salmon gives it its original point. A very complete and healthy recipe that we are going to enjoy a lot with family and friends :-) Besides, these meatballs are ideal for the little ones, who are going to eat, without knowing it, fish with all its nutritional properties :-)

Salmon, being a blue fish, stands out for the quality of its high biological value proteins and its heart healthy fats. Salmon provides about 11 grams of fat per 100 grams of meat. The fat is rich in omega-3s, which help to reduce cholesterol and plasma triglyceride levels, and also increase blood flow, which prevents the formation of clots or thrombi.

Salmon meat is also an important source of minerals (potassium, phosphorus, sodium, calcium and magnesium) and B vitamins. The mixture with egg, enriches the recipe in proteins of high biological value, lecithin, vitamins of group B, A and D. The dish is easy to chew and to digest, so except in case of food allergies, few more people will be the ones who do not agree with these meatballs.

Elaboration:

We start by cleaning and chopping the salmon into very small pieces.

We peel and chop the garlic cloves, onion and coriander.

Put the eggs in a bowl and beat them. Add the breadcrumbs or cornstarch, the salmon, the carrots, the garlic, the onion and the chopped coriander.

Add salt and pepper to taste and knead with your hands until everything is integrated.

Take a little dough and form the meatballs.

Coat the meatballs with flour and fry them in a pan with hot Betis olive oil until they are golden and crispy on the outside and very tender on the inside. Remove and place on absorbent paper.

Present the dish by serving the meatballs and decorate with a sprig of fresh parsley. It can be served with a green salad and it is an attractive and delicious dish.
