Chicken is a very versatile food that lends itself to a great many cooking styles, of which roasting is one of the simplest and perhaps that which emphasises most its flavour. This recipe will surprise you with its incredible taste and with the simplicity of its combination of everyday ingredients. What's more, chicken is one of the healthiest meats and of course a great source of protein. In addition, it provides us with essential amino acids, iron, zinc, phosphorus, vitamin A, niacin, thiamin, riboflavin and vitamins B6 and B12.

These nutrients aid tissue repair and protect the nervous system and the skin. They also help to boost the immune system and the production of red blood cells among other things. That's not all, because chicken is also an easily digested meat which is very useful for slimming and muscle-building diets.

Preparation:

The first thing to do is to prepare the seasoning for the chicken and vegetables. For this, we will need a bowl in which to mix the grated peel and the juice of the lemon, the oregano, the garlic (finely chopped), the Betis olive oil and the salt. Stir the ingredients until they are well blended.

Generously coat the pieces of chicken with the seasoning in an oven dish, leaving some for the vegetables.

Wash and chop the vegetables into slices around 1.5 cm thick and season them with the dressing.

Preheat the oven to 200°C (392°F) for around 5 minutes.

Place the vegetables in the oven dish with the chicken, brushing them with any remaining seasoning, and cover the dish with aluminium foil. Cook the dish in the oven for around 15 minutes so that the chicken and its garnish roast in their juices. Remove the aluminium foil and continue to cook for at least 10 minutes, until the chicken has browned.

Before serving, sprinkle a little oregano over the dish and it is ready to eat.
