Olimaker is the first table-top micro-oil mill capable of continuously and automatically integrating all the processes necessary to obtain, instantly, quality extra virgin olive oil extracted cold.

This is an innovation that will be officially presented at the XIX International Fair of Olive Oil and Related Industries, Expoliva 2019, which will take place in Jaén from 15 to 18 May.

The entrepreneurs Luis Serrano and Rafael Ibáñez are the creators of the Olimaker patent. They have worked until obtaining a prototype adapted to its functionality as well as in size and ergonomics. The entire process is carried out in a five-litre glass, which allows a maximum of three kilos of olives to be milled every 30 minutes. The glass is easily washable and, once the resulting by-product, the alperujo, has been removed, it can later be reused as an agricultural fertilizer or for other uses.

The result is "a kind of Nespresso but for olive oil, designed so that the user can instantly make his own extra virgin olive oil by making his own coupages between varieties of olives", explains Luis Serrano one of its creators.

The applications of this project are many, as they adapt to both the domestic and industrial environments.

"It is aimed at olive growers who want to know the fat yield of their olives and the quality of their oil; it is also aimed at the olive-oil industry, as it is ideal for evaluating product samples; and of course it is aimed at private customers and the Horeca channel, as it makes it possible to make their own oils and incorporate them into the kitchen".

Its creators are researching to offer in the future bags of olives already prepared to make blends and obtain specific extra virgin olive oils, also enriched with new nutritional properties that will surprise users.

"They would be like the Nespresso coffee capsules but in olive bags".

They are currently researching several lines of vacuum packaging to maintain the properties of the olives, since by packaging the olives in a modified atmosphere with established quality parameters and traceability, they will have olives to grind at any time.
