STUFFED SQUID WITH MEAT

Today we bring you a new recipe of sea and mountain, stuffed squid with meat, a delicious alternative to squid in its ink. It is a dish of the traditional cuisine of Menorca that is usually eaten on occasion of some festivity, however, during the last years its presence has been extended to restaurants, both traditional cuisine and creative cuisine.

Squid is a food rich in vitamins and essential minerals. It has a great content in calcium, zinc, selenium, coper and match. It is optimal to highlight the content in vitamin B12 and C. It is an excellent and tasty recipe, but it is limited for people that should moderate the seafood intake.

Preparation:

Scrupulously clean squid, removing any kind of sand or pebbles. Reserve the legs and fins for the filling.

Cut one of the onions in julienne strips and leave to simmer in a casserole with Betis olive oil. When it is soft, add the diced ham and the salted minced beef.

Chop the legs and the fins of the squid and add it to the casserole. Stir the whole until the meat is almost done, as we will cook the squid and the meat will continue cooking, and reserve.

Wait until meat is cool and add the egg, stir until good mixture.

Cook the minced meat in a pan with Betis olive oil, brown bread with the peeled garlics and the almonds.

Add the minced and a parsley sprig in a mortar, crush until a homogeneous paste.

Incorporate this paste to the squid filling, mix and reserve.

Introduce the filling inside the clean squid with the help of a spoon.

Close with a toothpick and pass the squid for flour.

Fry in a pan with abundant olive oil.

Chop the other two onions and cook in a casserole with a little Betis olive oil. When the onion gets a translucent appearance, place the crushed tomato and paprika.

Cook the set until the tomato is tender for 30 minutes approximately.

Then, pour the white wine, two glasses of water, laurel and pepper. Place the squid in the casserole and cook over low heat for 15 minutes with the lid on, until the squid is tender.

The squid can be served sliced and cover by tomato sauce.

Note: Dish for 4 diners. Preparation of 90 minutes. Cooking of 45 minutes.
