It is a savory and very healthy dish, perfect for those days when we want to get away from meat and fish or for those who have a vegetarian diet. With a powerful flavor and smooth texture, this recipe is an authentic delight !. Rice combines practically with all foods (meats, fish, vegetables, milk, nuts ...). Due to its high content of complex carbohydrates it is an energy food, but it contributes very little fat. Its consumption is indicated for people who perform sports regularly, since to develop their activity they must ensure an adequate supply of energy. This recipe combines rice with vegetables, which provide the dish with an important amount of vitamins and fiber. Elaboration: We start preparing the vegetables. We wash and peel the carrots and cut them into small dice. We wash the two types of pepper and chop them. Peel the clove of garlic and chop finely. We wash and chop the asparagus. Cut the tomatoes in half and grate them, discarding the skin. For cooking we are going to use a casserole that is deep since it allows the broth to evaporate more slowly. Heat some Betis olive oil in it and sauté the garlic clove. Before it is browned we incorporate the two types of pepper, carrot and asparagus. Stir and sauté over a low heat for 10 minutes. Add the grated tomato and chorizo ??meat, mix well and fry again a few minutes. When the tomato water begins to evaporate add the rice and stir well. To make a rice soup, my advice is to use round rice, pump type, since it is a rice that hold well the prolonged cooking without breaking or passing and absorb a large amount of broth. Finally, we add the vegetable broth, stir, salt and pepper to taste and bring to a boil. At the moment it starts to boil, lower the intensity of the fire and let it cook over medium heat for about 12 minutes, stirring occasionally during this time. Remove from heat, cover and let stand about 5 minutes before serving.   Note: the amounts indicated are for 4 people, cooking 25 min preparation 40 min.   (1) Caldoso (also known as Arroz Caldoso) is a dish which originated in Spain.
